Wolf Bargain(Chao Shan Cuisine)

Over the past 4 years, I have done many reviews on different types of eateries, but never a Teochew restaurant. In the last decade, many stand-alone Teochew restaurants have decided to call it a day for various reasons. Manpower, succession and profitability issues are those common problems faced by many restaurants.

If you are looking for a place for dinner, that wouldn’t blow a hole in your pocket. This is one restaurant for your consideration. It is quite difficult to find a Teochew restaurant that is able to keep the food authentic and affordable. I mean really affordable. For those working near Raffles Place, this restaurant might be familiar to you.

Chao Shan Cuisine has been in operation in its current location on Phillip Street for close to a decade. Previously they were located on Beach Road. Walking into the restaurant brings back a sense of nostalgia. The restaurant with its minimalist set up brings back my memories of what a Teochew restaurant should look like. No-frills, white walls and clean white table linens. It is one way the restaurant keeps its food affordable. It is always better to let the food do the talking. 

We didn’t order much food due to the size of our dining group. I am most impressed with the fish with bean sauce and leeks. The fish is incredibly delicious. The restaurant was generous in charging $35 for a fish weighting 700g. I was so into the food that I forgot to ask what type of fish I was consuming.

Oyster omelette was the second dish we ordered. It was equally delicious. The eggs and potato starch were in harmony with each other. If the potato starch is disproportionately added. The oyster omelette will taste overwhelmingly starchy and rubbery. If too many eggs are added, the omelette loses its springy texture, it will taste just like any ordinary fried egg. The chef has demonstrated a high level of skill to pull it off. A small portion close to 9 inches cost $20. The crispy pork lards and fluffy core make it a must-have. The oyster omelette is the comfort food for the soul. The small portion is good enough for 3 person.

No Teochew dinner will be completed without Yam paste. A medium-sized portion($16) is good for 4 person. The pumpkin gives out a nice aroma to the earthy Yam paste. The paste brings a sweet ending to the dinner.

Other popular dishes include Pork Jelly, Teochew style steamed fish and Wu Xiang. I will be revisiting the restaurant to try out other dishes. By the way, the restaurant doesn’t charge a service charge. For wine drinkers, corkage is free. It is an amazingly affordable place to have a restaurant meal. Reservation is advised.
